Ingredients:

6 chicken thighs

2 sweet potatoes, cut into Japanese chaos chunks

2 onions, quartered

1/4 cup melted butter

1/4 cup honey

1/4 cup Dijon mustard

Fresh thyme sprigs


Preparation:

Put the thighs, potatoes and onions in a large bowl. Whisk the butter, honey and mustard together and pour half over the chicken. Toss in some thyme and mix.

Place the potatoes and onions in a tajine. Put the chicken on top and cover. Roast for 30 minutes in a 400 degree oven. Remove from the oven and baste with remaining sauce. Cook for another 15 minutes and baste again, returning to the oven for a final 15 minutes.

Wine suggestion: Brouilly Beaujolais

Ingredients :

1 Lb of Skinless Chicken
6 Tbs of Dijon Mustard
6 Tbs of Honey
Panko to coat
Olive Oil


Preparation:


Preheat the oven at 400F degrees.
Prepare a baking pan with foil and pour a light amount of olive oil to prevent sticking.
Mix the mustard and honey together.
Pour the panko into a plate.
Dip the chicken into the honey mustard mixture.
Coat the chicken in panko. Make sure you over the whole thing.
Place on the baking pan.
Cook for about 30 minutes or until it reaches 180F. I used a meat thermometer to be on the safe side.
Serve

Ingredients:

300 gram boneless, skinless chicken breast
1 lime, squeeze to get around 1-2 teaspoons juice
150 ml coconut milk
1 teaspoon shaved palm sugar
vegetable oil
pinch of salt

Finely pestle the following ingredients into spice-paste
6 red chilies, roasted
6 shallots, finely chopped
3 cloves garlic, finely chopped
3 candle nuts, fried without oil
1 teaspoon of roasted shrimp paste



Preparation:

Rub the chicken breast with lime juice and salt, grill on charcoal or electrical or gas grill until half-cook
Heat oil in a pan and sauté the spice paste until fragrant
Pour in the coconut milk, salt and palm sugar, cook and stir until boiled
Add the chicken breast
Cook on low heat until the liquid is thickened and becomes gravy sauce
Remove the chicken from pan, baste with the gravy sauce
Grill slowly on charcoal or electrical or gas grill, turn around several times
Serve warm with rice

Spicy Chicken Soup

Ingredients :

+/- 250 g chicken breast
3 tablespoons sliced onion
3 tablespoons sliced celery
1 stalk lemon grass, bruised
2 kaffir lime leaves
2000 ml water
2 tablespoons oil
Spices :

4 tablespoons sliced shallots
2 tablespoons sliced garlic
1/2 teaspoon pepper
1 teaspoon sliced turmeric
6 roasted candlenuts
1 teaspoon sliced ginger
1 1/2 teaspoon salt
Accompaniments :

3 hard boiled eggs, sliced
250 g vermicelli, soaked in hot water
100 g bean sprouts, blanched
1 lime, sliced
Fried sliced shallots, potato chips, sweet soy sauce
Sambal :

10 red chilies, boiled
1 teaspoon salt





Preparation:

How to make :

Boil the chicken breast until tender, take the chicken breast out. Deep fry until golden and cut into small pieces.
Keep boiling the chicken stock until the stock remains 1000 ml.
Blend all spices into a paste. Saute the paste with oil, add lemon grass, kaffir lime leaves until fragrant.
Remove into the stockpot and continue boiling until well cooked.

To serve :

arrange in a bowl : chicken vermicelli, bean sprouts, green onion, celery and eggs.
Pour-in the hot soto soup, put on top the potato chips, sprinkle with fried shallots.
Serve with soy sauce, sambal and sliced lime.

To make sambal : boil 10 red chilies add salt then blend.

Spicy Highway Chicken

Ingredients:

1/2 kg chicken
2-3 tbsp mustard or refined oil (Use mustard oil for authentic flavours)
2 large onions, finely sliced
1 tsp ginger paste
1 tsp garlic paste
1/2 tsp turmeric powder
1/2 tsp coriander powder
1/2 tsp chilli powder
1/2 tsp roasted cumin powder
1 tsp garam masala powder
1/2 tbsp yoghurt
3 green chillies, split in two
1/2 tsp dry fenugreek leaves (crushed)
Salt to taste

Preparation:

step 1
Clean, wash and drain the chicken.

step 2
Heat a heavy bottomed pan or a wok and add the oil. If using mustard oil, smoke the oil.
Add onion and fry it till it starts turning brown in colour.
Lower the flame and add the ginger garlic paste. (I usually push aside the onion to one side and add the ginger garlic paste in the oil that drains towards the centre of the wok. Fry for a few seconds and then mix together with the onion)
Fry for a few seconds and then add the chicken.

Sear the chicken on a high flame for about 2-3 minutes and then reduce the flame to medium low.
Add the dry ingredients – turmeric, salt, coriander powder, chilli powder, cumin powder and garam masala powder.

Stir well and then add the yoghurt, crushed dry fenugreek leaves and green chillies.
Fry further for about 5 minutes on low flame.
Add 3-4 tbsp of water and cook till chicken is done.
Remove in a serving bowl and sprinkle chopped green chillies over it.
Serve with Naan or Tandoori Roti.

Note: Adjust the amount of chillies to suit your taste.

Ingredients

For the dough

1 Tbs yeast
1 tsp sugar
1 ½ Cup Warm water
3 Cup Flour
1 tsp salt
1 Tbs oil

For filling
½ Kilo beef sausage
1 Onion, sliced
1 Cup bell pepper (green, yellow, and red), sliced
Salt and pepper
1 Cup mozzarella cheese, grated
Oats for decoration

Method


 - Dissolve yeast and sugar in warm water, leave for 10 minutes or until foamy.
- Combine flour and salt in an electric mixer on low speed.
- Add oil and yeast mixture while constantly mixing for 5 minutes or until soft dough is formed.
- Shape the dough into a ball, place in a greased bowl, cover and let rise for 45 minutes.
- For filling, fry sausage in a skillet over a medium heat, add onion and pepper and stir for 5 minutes, season with salt, pepper, set aside to cool.
- Divide dough into equal parts; roll on a lightly floured surface and cut into rectangles.
- Fill sausage on one side of the edges, top with mozzarella then roll dough into cylinder
(Seal sides of the dough while rolling). Repeat with remaining quantity.
- Place in a baking tray (sealed side on bottom), spray with water then sprinkle oats.
- Cover and keep in a warm place to rise for another half an hour.
- Preheat oven to 180°C.
- Bake for 30 to 35 minutes according to bread size, cool and slice before Serving.

Ingredients

Slices of fresh toast
Skinned and boneless pieces of chicken
Slices of fried chopped onion
Sumac
Dry thyme
Olive oil
Salt and pepper
Normal flour
Whisked eggs
Bread crumbs
Frying oil

Method

• Cut edges from the toast (can be used in making of bread crumbs). Press them.
• Slice the chicken in thin slices and mix with onion. Add sumac, thyme, olive. Season the filling with salt and pepper.
• Put a suitable amount of the filling on one edge of the toast, roll it to take the shape of a finger, and then press it.
• Roll on the flour and dip it in the whisked egg. Roll it in bread crumbs. Make sure it is covered either with flour or bread crumbs.
• Put in the refrigerator for an hour to stiffen. (They could be put in plastic bags and kept in the freezer to be used later.
• Fry in preheated oil until it becomes brown. Put on kitchen towel paper to absorb excess oil.
